4 Ingredient Coconut Curry Soup

This soup is so easy to make, simple and takes very little effort! Yay! So warming and yummy. Its just coconut milk, veggie stock, sweet potatoes and curry paste! Makes about 3 servings.


1 can coconut milk

2 cups veg stock

2 sweet potatoes

2.5 tbsp curry paste (I used Patak's Mild Curry Paste)


Place sweet potatoes on a pan and cook until soft, 40-45 minutes at 350°.

Once the sweet potatoes are almost cooked, heat up coconut milk in a sauce pan and stir in curry paste.

Cut the sweet potatoes in half and allow to cool. Scoop out the insides of the cooked sweet potato and place into a blender with the veggie stock. Blend until smooth.

Add the sweet potato mixture in with the coconut milk. Stir until all is heated and combined. There you go! An easy delicious soup :)
