Spring is the time to indulge in asparagus! I love the colour, it's so vibrant! Along with it's awesome colour, comes many nutrients. It's an amazing source of folate, vitamin A, C + K. It's a great source of fibre, and it contains soluble fibre which helps to feed your gut bacteria. I use a 1/4 cup of oil in this soup not only to add to the creaminess, but also for a source of fat since asparagus and leaks contains A+K which are fat-soluble vitamins.
To make you will need: 3 cloves of garlic
1 bunch of asparagus
1/4 cup of oil (*I used camelina)
1/2 tsp of sage
1.5 cups of veg stock
*Camelina oil has an amazing ratio of omega 3,6+9's, it's high in vitamin E, it's great for skin health and it has a high smoke point! I also love that the 3 Farmers brand is Canadian! :)
Place asparagus, leek and garlic on a baking sheet. Bake for 30 minutes at 350 degrees.
Once cooked, place in a food processor or blender with the stock, oil, sage and s+p (to taste). Blend for 2-3 minutes. Place in a saucepan to heat through. That is it! Super simple and so delicious. Makes 2 servings. Want to know why it's best to make your own soup? click here
