《Ingredients》 3 ripe bananas 1/4 cup melted coconut oil 1 tsp apple cider vinegar Pinch of salt 1/4 cup maple syrup 1/2 tsp cinnamon 1 1/4 cup coconut flour 1 cup whole grain flour 2 heaping tsps baking powder 1/4 tsp baking soda 1 cup cashew milk 1 cup fresh blueberries 1/2 cup crushed walnuts 《Method》 Heat oven to 350° Mash bananas in a large bowl. Mix in all of the wet ingredients. Combine well. Add in the dry ingredients except for the blueberries and walnuts. Once everything is mixed, fold in the walnuts and blueberries. Oil muffin tin lightly with coconut oil. Fill the muffin tin. The batter doesn't really rise, fluff up the top and fill the tin so that there is batter sticking out. Bake for 20 minutes and enjoy!
