Banana Nut Muffins

These are great muffins to have on hand for snack or a quick breakfast, they are made with oat flour which will help keep you satiated. Super fluffy and not dense at all. Can be whipped up in under 10 minutes!
Yields 12 large muffins
Ingredients:
3 cups oat flour (or other)
2 cups mashed ripened banana
3/4 cup crushed walnuts (or other)
1/2 cup avocado oil (or other)
1/2 cup brown sugar
2 tsp baking soda
2 tsp apple cider vinegar
2 tsp vanilla
2 tsp cinnamon
1/2 tsp salt
**The riper the banana the sweeter the muffin. If bananas aren't super ripe, add more sweetener.
**Blend oats in a blender to make oat flour

Method:
Preheat oven to 350F degrees
- In a bowl combine all ingredients. Mix well. Allow to sit for a few mins once combined.
- Oil a muffin tin (I used coconut oil) and fill to full
- Bake for 20-25 mins. Edges will brown and muffins will rise.
Enjoy.
They keep well on the counter for 3 days, refrigerate for up to a week.
