This burger is incredibly delicious and easy. You only need jackfruit and BBQ sauce, plus the burger toppings. You have to try this! Jackfruit is a tropical fruit that has a decent amount of protein, manganese, copper, potassium and magnesium. It is a great support for heart and immune health. You can eat it cooked or raw. When you purchase young jackfruit it is perfect for savory dishes, and when you purchase it ripened it is nice and sweet, makes a great snack. You can often find canned jackfruit at health food stores or Asian markets.
1 can of young jackfruit 3/4 cup of BBQ sauce of your choice Burger buns of choice Optional toppings:

To make the pulled jackfruit, you'll need to drain the liquid from the can of jackfruit. Take the slices of jackfruit and slice them in half to remove the little pod. You can eat these but they won't take a part in this method. Then heat a skillet on medium heath with some oil and place jackfruit pieces in and coat with 3/4 cup of BBQ sauce. Bring to a simmer, and add enough BBQ to ensure the pieces are coated well. Thin with some water if necessary to make a sauce. Reduce to medium-low heat for 20 mins. Halfway through, take 2 forks and start to shred the pieces to get a "pulled" texture. Meanwhile, prepare your toppings.
For a quick easy slaw, take shredded cabbage and carrots and coat with vinegar, salt and pepper. Cut up some jalapenos and avocados and have greens ready. Once pulled jackfruit is cooked. Toast your buns and assemble! Pairs well with some veggies and sweet potato fries on the side ;) Delicious! :)
