Blueberry Cardamom Oat Muffins⁣

If overnight oats transformed into a muffin... that's what these are!⁣ Light, oaty, nutritious and delicious!

⁣They take 10 mins to whip up + 25-30 minutes to bake.⁣ Yields 12 muffins.

These are not your typical fluffy, risen muffins with muffin tops. These are little delicious muffin discs! Literally overnight oats muffins.


2 cups oat flour⁣

1/2 cup maple syrup⁣

2 tsp baking powder⁣

1 tsp cinnamon⁣

2 tsp cardamom (optional)⁣

1/2 cup crushed walnuts (any nut)⁣

1 cup cashew milk (any milk)⁣

3/4 cup fresh or frozen blueberries⁣

3 tbsp ground flax ⁣

1 tbsp avocado oil (any oil)⁣

You can also do 1/4 cup coconut/cane/brown sugar and 1/4 cup maple syrup if you like things a little sweeter.⁣


1️⃣Heat oven 350 degrees⁣

2️⃣In a bowl, just mix it all together😂

3️⃣Grab a muffin tin, oil the tin and place in your mixture, 3/4 to the top.⁣

4️⃣Bake for 25-30 mins. Edges should get golden brown.⁣
