Blueberry Cardamom Oat Muffins
If overnight oats transformed into a muffin... that's what these are! Light, oaty, nutritious and delicious!
They take 10 mins to whip up + 25-30 minutes to bake. Yields 12 muffins.
These are not your typical fluffy, risen muffins with muffin tops. These are little delicious muffin discs! Literally overnight oats muffins.

▶️Ingredients:
2 cups oat flour
1/2 cup maple syrup
2 tsp baking powder
1 tsp cinnamon
2 tsp cardamom (optional)
1/2 cup crushed walnuts (any nut)
1 cup cashew milk (any milk)
3/4 cup fresh or frozen blueberries
3 tbsp ground flax
1 tbsp avocado oil (any oil)
You can also do 1/4 cup coconut/cane/brown sugar and 1/4 cup maple syrup if you like things a little sweeter.
▶️Method:
1️⃣Heat oven 350 degrees
2️⃣In a bowl, just mix it all together😂
3️⃣Grab a muffin tin, oil the tin and place in your mixture, 3/4 to the top.
4️⃣Bake for 25-30 mins. Edges should get golden brown.
