Chewy Chocolate Chip Oat Cookies + Bites

These cookies are delicious and easy to whip up! Full of healthy carbs and fats they are nutritious that will give you a satisfying treat feeling, after all I did include dairy-free chocolate chips! These are great to switch out pre-made granola bars for. Oats are an excellent source of fibre, vitamins and minerals and will help in keeping your blood sugar stable throughout the day. You can skip the dairy-free chocolate chips and opt for walnuts for an added nutritious omega-3 kick. These are sweetened naturally and are a very satisfying snack! Yields 12 cookies.


Ingredients:

2.5 cups oats

1 mashed banana

1/2 cup chocolate chips

1/2 cup shredded coconut

2 tbls maple syrup

1/2 cup almond butter


Combine thoroughly.

Pick up 1 tablespoon portions and place on baking sheet. Make sure the ingredients are sticking together.

Bake at 350 degrees for 10 minutes.

That's it!


Since you have most of the ingredients I figured I'd throw in another recipe with a twist!


Chewy Chocolate Chip Oat Bites

Ingredients:

2.5 cups oats

1 chia egg

1/4 cup maple syrup

1/4 cup almond butter

1/2 cup shredded coconut

1/4 cup chocolate chips


To make a chia egg (great plant-based egg replacement) mix 1 tablespoon of chia seeds with 2.5 tablespoons of water. Let it sit for 2 minutes and that's it!


Combine all ingredients except chocolate chips in a food processor and process until a doughy texture forms. Add in Chocolate chips and slowly process them into the mix. Place tablespoon size amounts of mixture into your hands and roll into a ball. Place on a baking sheet (yields 12) and bake at 350 degrees for 12 minutes.
