Chickpea Cauliflower Potato Curry⁣

⁣This is DELICIOUS!!⁣

So full of flavour and will warm you from the inside out. Curries are one of my absolute favourite dishes. ⁣


1/2 Cauliflower (florets)⁣

2 Potatoes (peeled and cut)⁣

1 Onion (chopped)⁣

2 Cups rice⁣

2 Garlic cloves (chopped)⁣

1 Can coconut milk⁣

1 Can diced tomatoes⁣

1/2 Cup red cabbage (shredded)⁣

1 Cup chickpeas (cooked)⁣

1 Tbsp curry powder⁣

1 Tsp turmeric⁣

1 Tsp cayenne pepper⁣

2 Tsp cinnamon⁣

1 Tsp nutmeg⁣

2 Tsp oil⁣

1 lemon⁣



Place cauliflower florets and cut up potatoes on a lightly oiled baking sheet. Sprinkle with cinnamon and nutmeg. Bake for 30-40 mins at 350 degrees F.⁣

Cook rice according to package instructions.⁣

In a saucepan on medium heat add a bit of oil and onions. Saute for a few minutes then add in the garlic.⁣

Once the onion and garlic are browned add in the curry, turmeric and cayenne spices, toast them up (allow them to take up all the liquid).⁣

Add in coconut milk and can of tomatoes. Mix well.⁣

Remove 2 cups of the curry and blend into a liquid, then add back into the saucepan. Add in sliced cabbage and chickpeas.⁣

Add in cauliflower and potatoes with the juice of half a lemon. Simmer for 10 minutes.⁣

Serve with rice and fresh lemon.⁣
