Coconut Chia Pops!

These are SO GOOD and SO EASY!

I was inspired to make a treat for Canada Day that would be healthy and delicious, these were the outcome. They are made with 5 ingredients that you can whip up in minutes. Full fat coconut milk is full of just that fat, the good fat, the fat that helps your skin glow, your hormones work and keeps your body running. Chia seeds are an amazing source of fat as well and omega 3's to support your brain. Maple syrup is used to add some sweetness, it is full of antioxidants and is a great sweetener. I used raspberries and cherries to sweeten these pops up and give them an amazing fruity flavour. These berries are full of minerals, vitamins, phytonutrients and antioxidants. What you will need:

A popsicle mold

6 popsicle sticks

1 can of full fat coconut milk

1/4 cup of maple syrup (sweeten to your liking)

2 tbsp of chia seeds

1/2 cup of cherries (fresh or frozen)

1/2 cup of raspberries (fresh or frozen)


In a bowl, whisk together coconut milk, chia seeds and maple syrup.

Add this mixture to your popsicle molds. Make sure to only fill the molds to 3/4 of the way up. Like pictured. Place these in the freezer for 45 minutes. You want them to start to freeze but not fully so we can make them pretty ;) Next, blend your fruit into a jam like mixture. Or you can keep it chunkier your choice! You can use a fork and just smash them as well.

Once your coconut mixture has been freezing for 45 minutes, remove from the freezer. Add the berry mixture to the top of your popsicles.

Then, you are going to use your popsicle sticks to push some of the berry mixture down into the coconut mixture. Make sure to push some down the sides so you get a nice ombre look with the fruit. You can also skip this step and add the mixture to the coconut milk directly so you have fruit throughout. Sit the popsicle sticks in the middle half way down and freeze again. Allow these to freeze for at least 2 hours. Remove from freezer and enjoy! :)
