Dil-icious Buffalo Cauliflower Tacos 🙌

These are crazy easy to make, vibrant and tasty! Cauliflower is a great source of fibre, vitamins and minerals. It is high in choline which plays a major role in maintaining the integrity of cell membranes, synthesizing DNA and supporting metabolism . Cauliflower is also rich in sulforaphane which is a very well studies antioxidant and it's so versatile, like being used as the focal point in tacos!

You'll need: 1 head of cauliflower 1 cup BBQ sauce of choice 1/2 cup of hot sauce (optional) Lettuce or collard greens for the "taco" 1 avocado 1/4 cup walnuts 8 cherry tomatoes 1 cup soaked cashews 3/4 cup cashew milk 1 cup of fresh dill 1 tsp ACV S+P

Method: Heat oven to 410 degrees. Chop up cauliflower in little florets and add to a bowl with the BBQ + hot sauce. Coat well. Place on a baking sheet covered in tin foil. Bake for 20 mins. Flip and bake for another 15-20. Chop up tomatoes and mash avocado into a guac. Grind walnuts (these are for added flavour texture and omega 3's). Wash greens of choice and set aside to dry.

For the dil-icious sauce. Blend cashews, cashew milk, dill, s+p and ACV until creamy! Once the cauliflower are cooked. Assemble however you wish 😊

They are messy but super fun to eat full of veggies and so flavourful! 🙌
