Harvest Salad + Avocado-Chia Dressing

This salad is so satisfying - it's super hearty, healthy and delicious. These superstar whole foods paired with the nutty, creamy avocado-chia dressing is the perfect combo! Full of fiber, antioxidants, healthy carbohydrates and fat, you'll be kept full - I promise! Plant foods are bursting with plant phenols which are powerful micro-nutrients that the body needs to thrive.

Kale, is a super star cruciferous vegetable. It's incredibly high in lutein, which is one of the two compounds that make up the colour pigment in the human eye! Kale is high in vitamin A, C + K - talk about supporting your immune system! Sweet potatoes, bring a richness, and they are bursting with beta-carotene (vitamin A), vitamin C and manganese. Walnuts are an excellent source of omega-3's which are very important for brain health! The dried cranberries add a sweetness and are full of antioxidants and dietary fiber. The absorption of vitamin A in the body is best when eaten with fat. That is why I have paired this salad with a delicious *oil-free*avocado-chia seed dressing.


Detoxifying Harvest salad:

Bake 1 sweet potato until tender ~45 minutes at 350ºC. Cup up 1 bunch of kale, remove the leaves from the stem.

Massage the kale with the dressing (recipe below). Add in 1 cup of dried cranberries, 1 cup of walnuts and cut up cooked sweet potato. Combine, and voila! :)


Avocado-Chia Seed Dressing:

· 1 avocado

· 2 tbls nutritional yeast

· 2 tbls lemon juice

· 1tbls apple cider vinegar

· Salt and pepper

· 1 clove of garlic

· 2 tbls balsamic vinegar

· 1 tsp chia seeds

· 1/4 cup water

Combine in blender until creamy!
