Hazelnut Blueberry Chocolate Chip Muffins


One bowl, Hazelnut Blueberry Chocolate Chip Muffins, they are delicious! Makes 12.⁣

Here's what you'll need ⁣

1 1/4 cup flour (oat, gf, white)⁣

1 1/4 cup plant milk (oat, cashew, almond)⁣

1 cup rolled oats⁣

1/2 cup maple syrup⁣

1/2 cup almond butter⁣

1 tsp baking soda⁣

1 tsp vanilla

2 tbsp ground flax⁣

4 tbsp water⁣

1/2 cup blueberries (fresh or frozen)⁣

1/2 cup chocolate chips⁣

1/2 cup crushed hazelnuts (or other nut) ⁣

Method⁣

Preheat oven to 350F⁣

In a small bowl mix water and flax seeds, let sit for 2-3 mins, this is a flax egg⁣

In a large bowl mix all other ingredients together⁣

Add flax egg to batter, combine.⁣

Oil/butter a muffin tin and fill with batter, 3/4 or close to the top (they will rise)⁣

Bake for 15 mins⁣
