So healthy you can have them for breakfast! (Yields 6) ▫️3 apples ▫️1/2 cup oats ▫️2 tbsp maple syrup ▫️1 tbsp coconut oil ▫️1/4 cup pumpkin seeds ▫️1 date ▫️1 tsp cornstarch ▫️1 tsp cinnamon ▫️1 tsp nutmeg
▶️ Method: 👉Cut apples in half and scoop out the inside making a little bowl. Chop up insides into small pieces and set aside.
👉In a bowl combine all oats, 1 tbsp maple syrup, coconut oil, pumpkin seeds, cornstarch, cinnamon and nutmeg. Soak the date, remove the pit and mash into a paste. Combine with the oat mixture to form a crumble.
👉Take apple pieces and coat with a sprinkling of cinnamon and 1 tbsp of maple syrup then add 1/4 cup of the oat mixture.
👉Fill the apples with this mixture and top with the rest of the crumble.
👉Bake the apples for 25-30 mins, until apple is tender. Enjoy with nuts, berries, added maple syrup, some milk, whatever you'd like!
