Loaded Sweet Potatoes

Mmmm now this is a breakfast to remember! Ever think of enjoying sweet potatoes for breakfast?! They are the perfect base and can act like toast. They are loaded with vitamin A, vitamin C, fiber, potassium, carotenoids, niacin, riboflavin and much more. They contain no fat and are low in sodium. This is so decadent, a great addition to your morning routine, this breakfast is sure to keep you feeling full and happy!


Cut the sweet potatoes length wise in 4, lay on a baking sheet and bake for 35 minutes at 350 degrees. Once baked, let cool and top with nut butter, pecans, pumpkin seeds, coconut and blueberries. You can make this your own and put whatever you'd like on top! Make sure you have some fat on there to help the vitamin A absorption. *A savory option would be mashed avocado with nutritional yeast, tomatoes and hummus.
