Mushroom Lentil Risotto

This recipe came about on a complete whim. I was planning on making a lentil salad, but I had cooked the lentils a little too long and they got mushy. So naturally, lentil risotto was born! This makes a delicious side dish and it is incredibly easy to make, just 4 ingredients. Lentils are a really cheap and nutritious source of protein and fibre.

You'll need:

1 package of oyster mushrooms

2 cups cooked red lentils

1/2 chopped onion

2 cloves of garlic

S+P Method: Cook lentils as directed on package, and we are going to slightly over cook them, tack on 3-5 minutes to the cook time. Meanwhile, clean and cut your mushrooms. You can peel oyster mushrooms and they will create little strings of mushroom. In a pan, saute your onion and garlic and add in the mushrooms. Once your lentils are over-cooked ;) strain the water and stir them, you can even mash them slightly. Add in your cooked mushroom mixture and add s+p to taste

Boom a delicious, nutritious side, probably mush better than my lentil salad was going to be! :)
