No Bake Vegan Chocolate Cheesecake Jars


Tofu in a dessert?! You better believe it! These are full of nourishing ingredients and absolutely satisfying! Loaded with protein and healthy fats, they make the perfect snack or dessert.

Gluten free, dairy free, refined sugar free and egg free.

Yields 2 or 4 in smaller jars.


Crust ingredients:

1/4 cup oats

1/4 cup hazelnuts

4 tbsp maple syrup

1 tbsp peanut butter


Filling Ingredients:

1 block silken tofu

40g of dark chocolate (65%)

2 tbsp cocoa powder

1 tbsp peanut butter


Method:

For the crust: combine all ingredients in a food processor until it can stick together between your fingers.


Spoon the mixture into the bottom of your container and pat down.


For the filling: In a food processor add tofu and blend. Then melt the chocolate and add it into the blended tofu with the rest of the ingredients. Blend until smooth. Spoon the mixture on top of the crust in the jars.


Top with crushed peanuts, raspberries, strawberries, peanut butter.
