Quick Pasta Salad

This is a suuuper quick and nutritious pasta salad. I used Chickapea pasta, I LOVE that it's made with chickpea flour which makes it a great source of protein and fibre. I added in Manitoba Harvest hemp hearts for a source of omega 3's and protein (brain health 🙌). I love adding hemp hearts into well.... everything!!
Salad Ingredients ⤵️
3 cups cooked pasta
1/2 bell pepper, diced
7 olives, diced
2 handfuls of greens (arugula & spinach)
Dressing Ingredients ⤵️
1/4 cup hemp hearts
1/4 cup olive oil
4 tbsp lemon juice
1 tbsp maple syrup
1 tsp Dijon mustard
2 cloves garlic, minced
2 tsp Herbe de Provence
2 tsp dried chili flakes
Salt & Pepper
Method ⤵️
☀ Add all pasta ingredients into a bowl, make sure pasta is cooked and cooled (rinse with cold water once cooked).
☀ Mix dressing ingredients together
☀ Throw it all together in a bowl!
🙌 Tastes better after it sits in the fridge for a few hours.
