Southwest Pasta Salad

A great summer salad!


Easy to whip up and full of delicious veggies. I used chickapea pasta, it's my absolute favourite, it's made out of chickpeas and loaded with protein and fibre! The dressing is a creamy south west inspired sauce,

completely dairy, egg and gluten free.


Ingredients:

3 cups cooked pasta

1 chopped orange pepper

3/4 cup chopped cherry tomatoes

1/2 cup frozen corn

1/4 cup chopped jalapenos (to taste)


Dressing:

3/4 cup vegan mayo

1/4 cup pickled jalapenos

1 tsp onion powder

1 tsp garlic powder

1 tsp paprika

1 tsp chili powder

1 tbsp lemon juice

1 tsp apple cider vinegar

Salt + Pepper


Method:


Cook pasta, I used chickapea pasta. If you are using legume pasta be sure to rinse with cold water once drained.

Allow pasta to cool.

Once cooled add in the vegetables.


For the dressing:

Blend to combine.


Top the salad with avocado, basil, parsley or cilantro!
