Stuffed Peppers

Looking for something to meal prep for the week? This is the perfect recipe. Easy, filing and tastes great even at the end of the week. This is basically a quinoa chili inside a pepper, yum! Recipe makes 9 peppers.

You'll need:

9 peppers 1 1/2 cup of quinoa 3 cups of veggie stock 1 onion 3 cloves of garlic 1 can of black beans 1 sweet potato 1 large can of diced tomatoes 2 tbsp chili powder 1 tbsp turmeric 1 tsp of cayenne pepper 1 package of mushrooms 1 cup of brussel sprouts *You can put whatever veggies you'd like in this* Method:

Cut the tops off the peppers and scoop out the inside. Wash as needed.

In a pot, cook your quinoa (boil 3 cups of stock, add in quinoa, simmer with lid for 15-17 mins).

In a separate pot add your chopped onion with some water, then garlic. Add in mushrooms once the onion and garlic are cooked.

Cut up your sweet potato and brussel sprouts in small chunks and you can roast them in the oven or cook in a pan.


Once your quinoa is cooked, add in the can of tomatoes, spices and beans. Begin to add in the vegetables as they cook, so you end up with a big pot full of goodness! (as pictured) Set your oven to 350° and start filling your peppers with the filling. Fell free to make this your own. Add cheese on top or anything you think will spice this up! Bake your peppers for 40 minutes. Voila, a delicious meal prep idea! Bon Appétit
