Sweet Potato Soup


Is there a food more comforting and warming than a bowl of nourishing soup? This is an easy and minimal recipe that packs a great punch of flavour. Sweet potatoes are high in vitamin A and coconut milk is a great source of healthy fat, together they create a healthy and satisfying combo.

Ingredients: 2 Sweet potatoes 2 Cans coconut milk 1 Onion 3 Cloves of garlic 2 Cups of water 2 Tbsp oil S+P Method:

Set oven to 375 degrees, wash and peel your sweet potatoes and chop into rough pieces, use hand to coat the sweet potatoes with oil, salt and pepper.

Bake for 45 minutes, until soft. Meanwhile, saute the onion and garlic.

Once the sweet potatoes are baked place half in a blender with one can of coconut milk and one cup of water. Blend until creamy, adding in water as needed.

Place this batch in a pot on low heat.

Place the rest of the sweet potatoes, coconut milk, onion, garlic and water in the blender. Blend until it reaches a similar consistency as the first batch.

Adding water as needed. Allow the blended soup to simmer on low for a few minutes, adding in more water and S+P as needed.
