Twice Baked Tex Mex Sweet Potatoes

Sweet potatoes are a great carbohydrate, they contain vitamin A, vitamin C, manganese and many other important vitamins and minerals. They are great to fill you up and keep blood sugar stable. These loaded sweet potatoes are delicious and really worth the effort!


2 sweet potatoes

1/2 cup cooked rice

1/2 cup black beans

1 tbsp plant based butter/oil

1 onion

2 cloves garlic 1 tbsp chili powder

1 tsp cumin

1 tsp cayenne pepper

s+p Avocado Cream 1 avocado

1/2 cup water

1 tsp lemon juice 2 tbsp soaked cashews Optional toppings: cheese, salsa, jalapenos, chives

Method: 1) Slice sweet potatoes in half, bake at 350 for 40 minutes (until the middle is tender) 2) In a pan, saute chopped onion and garlic, once tender add in rice and beans - once combined, set aside. 3) Remove sweet potatoes from oven and allow to cool (keep the oven on). Cut a hole to dig out the middle of the potato. You still want to keep an edge around the potato. Place the potato that you scoop out into a bowl. 4) Add butter, and spices to the potato and start to mash. 5) Combine mashed potato and the onion and bean mixture. 6) Fill the sweet potato peels with the filling and place back in the oven for 20 minutes (if you are using cheese this is a good time to put it on).

7) Once cooked, remove from oven and top!
