Vegan Calamari (more like Fauxmari)⁣


a head up this is delicious however according to my omnivorous boyfriend this does not taste like calamari😜 But it's SO GOOD! I suggest if you are going for a "fishy" taste to add in some seaweed flakes.⁣ ⁣ 🍄You'll need:⁣ 8 King Oyster mushrooms⁣ 1.5 tsp Pepper⁣ 1 tsp Salt ⁣ Dash (less than 1/2 a tsp) chili powder ⁣ 1.5 tsp Cayenne pepper⁣ 1 cup Panko crumbs⁣ 2 tbsp Flax seeds⁣ 1/4 cup Whole wheat flour⁣ 1/4 cup Corn starch ⁣ 1.5 cup Cashew milk⁣ 1/4 cup Soy sauce⁣ 3-4 tbsp Coconut oil ⁣ ⁣ 🍄Method:⁣ 1) Wash the mushrooms and cut off the bottom and the top, you will be left with the middle cohesive sized part. Save the ends for stock or another recipe.⁣ 2) Slice the mushroom into 1/4-inch slice (think of an onion rings size).⁣ 3) Cut circles into your slices. I used a knife, if you have a circular cookie cutter use that.⁣ 4) Cover your rings in soy sauce. The mushrooms soak it up really fast so mix the rings in the soy sauce quickly. 5) Set up a coating station. ⁣ First plate: flour + corn starch ⁣ Bowl: Cashew milk⁣ Second plate: bread crumbs, s+p, spices, flax, the rest of the ingredients.⁣ 6) In a pan start heating up coconut oil (1 heaping tbsp at a time)⁣ 7) Take a ring dip it in the flour, then the milk, then the crumbs. Do this until they are all covered. ⁣ 8) Once your oil is hot, add in the rings to cover the surface of the pan. Flip when the bottom is golden and crispy. Continue to do this until the rings are all golden brown.⁣ ⁣

Voila! Crispy Fauxmari 🤤 To dip, some vegan mayo and hot sauce is delicious, or some lemon. Have fun! ⁣🥰 These are well worth the effort 🙌
