These are gluten free (use gf oats), refined flour, refined sugar, dairy and egg free and absolutely delicious! 🔹For the date filling 1.5 cups of dates 2/3 cup of water 1 tsp vanilla extract 1 tbsp of maple syrup 🔹For the crumble 1 cup oat flour 2 cups of oats 1 tsp baking powder 1 tbsp cinnamon 1 tsp cardamom 2 tbsp of coconut oil 1/4 cup of almond butter 3 tbsp of maple syrup Method: Boil water in a pot, once boiled add in the dates (make sure the pits are removed). Allow to boil for a few minutes. Add in the rest of the date paste ingredients. Remove from heat once the dates are loose and use a fork or a potato masher to make a date paste. For the filling, in a food processor combine everything except for 1 cup of oats. The crumble should slightly stick together when you pinch it. If it's not add a little more coconut oil. Stir in the remaining oats (gives it some texture). Cover an 8x8 baking dish with parchment paper and place 3/4 of your crumble in the dish. Push down the mixture creating a crust. Make sure it's compact. Cover the crust with the date mixture, ensuring it's pushed down and then top the dates with the remaining crumble. Using your fingers to gently push it down. Bake at 350 degrees for 35-40 minutes. Until slightly brown. Allow to cool and enjoy. Preserves well on the counter for 2 weeks.
