A childhood staple, turned plant-based!! This comforting and delicious dish is prepped and cooked in under 25 minutes.
Makes 3-4 servings
Ingredients 1.5 cups fav faux meat (I used ground up Gardein "meatballs") 4 cups vegetable stock 1.5 cups fav pasta (I used Chickapea pasta) 1 onion (diced) 2 cloves of garlic (minced) 2 tbsp tomato paste 1 tbsp oil/water 1 tbsp chili powder S+P Optional: 3/4 cup of your fav shreds (I used PC brand plant based shreds)
Method 1) Over medium heat add oil, onions & garlic, sauté until tender 2) Add in your veggie meat, stir until browned 3) Add tomato paste, chili powder, s+p, combine 4) Add stock & pasta 5) Simmer on medium heat for 10-15 mins covered (storing every few minutes) remove from heat once desired thickness has been reached. 6) Add cheese if you want, combine & serve! 7) Enjoy!
