Vegan Pierogies

Pierogies 😍 They remind me of my childhood when my babushka would make them from scratch every weekend.
But ain't nobody got time for that so here's a way to make cheater pierogies, you don't have to make the dough! Instead you can use dumpling wrappers 🙌 These are awesome to make and you get to play around with the filling. Here is a potato leek pierogi recipe: You'll need: 1 pack of Dumpling wrappers 6 red potatoes chopped + boiled Green onion 1 leek 1 tbsp of oil S+P
How to: Bring a pot of water to boil. Clean and chop up potatoes. Add into boiling water. Boil until tender ~20 minutes. Chop up the leek and cook in a pot in a tbsp of oil until tender. Once potatoes are cooked, drain the water and add in the cooked leeks. Mash together. Adding in salt and pepper. Now that you have your filling it's time to wrap the pierogies. Have a small bowl with water on hand. Place 1-2 tsps of filling into the center of the dumpling wrapper. Wet half the edge of the wrapper with water and fold the corners together creating a half circle shape. Press around the edges, sealing the pierogi.
Place on a baking sheet, not letting them touch each other. You can keep them frozen for later. Once you are ready to eat them, place the frozen pierogies in boiling water and cook until they float. In a pan cook up some onions and garlic and cook the pierogies until lightly brown. Garnish with green onion.
