This vegan tofu frittata is absolutely delicious, full of protein and veggies, it's so easy to make! It's egg, dairy and gluten free.
If you aren't a fan of tofu or aren't sure how to use it, this is a great recipe to get you started.
〰️This recipe is broken down into two parts, the frittata mixture and the veggies that you'd like in.
Ingredients for the mixture👇
1 block firm tofu
1/2 cup plant based milk
2 tbsp cornstarch
1 tbsp garlic powder
1 tsp paprika
1 tsp thyme
1 tsp apple cider vinegar
2 tbsp nutritional yeast
Salt & pepper
Place all of these ingredients into a blender until it's creamy and combined.
🧅🍅Cook up your veggies. I did half a pepper, 4 diced mushrooms, 1 onion, 2 cloves of garlic, 6 chopped olives, 6 shredded baby potatoes.
As long as your veggie base contains onion and garlic, you're good to add whatever else is in your fridge like tomatoes, spinach, zucchini, sun-dried tomatoes etc.
Once your veggies are sauteed and mostly cooked, add in your tofu mixture.
👉Place the mixture into a casserole dish and bake for 1 hour at 375°
🥑🌶️Top with avocado, hot sauce, chives, etc.
