Vegan Tofu Frittata



This vegan tofu frittata is absolutely delicious, full of protein and veggies, it's so easy to make! It's egg, dairy and gluten free.⁣


If you aren't a fan of tofu or aren't sure how to use it, this is a great recipe to get you started. ⁣

〰️This recipe is broken down into two parts, the frittata mixture and the veggies that you'd like in. ⁣

Ingredients for the mixture👇

1 block firm tofu⁣

1/2 cup plant based milk⁣

2 tbsp cornstarch⁣

1 tbsp garlic powder⁣

1 tsp paprika⁣

1 tsp thyme⁣

1 tsp apple cider vinegar⁣

2 tbsp nutritional yeast⁣

Salt & pepper⁣

Place all of these ingredients into a blender until it's creamy and combined. ⁣

🧅🍅Cook up your veggies. I did half a pepper, 4 diced mushrooms, 1 onion, 2 cloves of garlic, 6 chopped olives, 6 shredded baby potatoes.⁣

As long as your veggie base contains onion and garlic, you're good to add whatever else is in your fridge like tomatoes, spinach, zucchini, sun-dried tomatoes etc. ⁣

Once your veggies are sauteed and mostly cooked, add in your tofu mixture. ⁣

👉Place the mixture into a casserole dish and bake for 1 hour at 375°⁣

🥑🌶️Top with avocado, hot sauce, chives, etc. ⁣

You can easily make this your own😊
